Our producer, named Chris, is an American native who has been producing chocolate in California for 15 years before just recently establishing in Bangkok. He is a very passionate person looking to support local farmers.
All chocolate are “bean to bar”. Chris takes care himself of the fermentation of the cacao pods. He is The exception in Thailand…
“We sourced the finest ingredients possible from all over Thailand, including fresh cacao fruit (pods) directly from the farmers. We are one of the few chocolate makers in the world that start with fresh cacao and ferment the raw cacao ourselves, giving us unparalleled control of every step of the chocolate making process. After fermenting and drying of the cacao beans, we roast and refine the beans into a velvety smooth chocolate in our Bangkok microfactory using the same methods and machine used across Europe but on a craft scale. It gives us the flexibility to control the finished chocolate.
Not only do we strive to make the best chocolate possible, we also try to give back. We donate a percentage of our proceeds from every bar we sell to animal rescues,including elephant sanctuaries in Thailand.”
